Tortilla Soup

  • 5 lbs chicken breast, cooked and shredded
  • 6 cloves garlic, smashed
  • 1 stick margarine
  • 1 gal chicken broth
  • Diced tomatoes, approx 1 gal
  • 2 small cans tomato with green chilies
  • 4 cups salsa
  • Chopped, fresh cilantro (the whole buunch)
  • 1/4 cup cumin


Toppings:
  • Shredded jack cheese
  • Sour cream
  • Tortilla chips
  • Hot sauce


Melt margarine in a large pot. Add minced garlic. Cook but do not brown garlic.
Add all the other ingredients. Cook for several hours until the flavors are blended.
When serving, top with the shredded cheese, source cream, hot sauce and tortilla chips.
